Potatoes
scallions, sliced
1/2 cup balsamic vinegar
3 tsp olive oil
1 tsp oregano
1 tsp basil
1/2 tsp dry mustard/or Dijon
2 TBL chopped fresh parsley
*I added a can of artichoke hearts and a can of black olives, in an attempt to clean-out the pantry-but not necessary.
- Boil your potatoes until tender.
- Mix your vinaigrette (all ingredients excepts scallions, fresh parsley, and spuds)
- Toss all ingredients.
